If you’ve never had Peruvian cuisine you are missing an amazing cuisine that has evolved from both local and immigrant traditions. The foods eaten today in Peruvian cuisine are the same recipes from ancient civilizations. Peruvian dishes have also inherited some of its roots from European, African and Asian influences. The country of Peru and its geography bring into play local seafood from the coast, tropical fruits from the jungle and grains and potatoes from the Andes.

Peruvian cuisine reflects local practices and ingredients—including influences from the indigenous Inca and cuisines brought in with immigrants such as Spanish cuisine, Chinese cuisine, Italian cuisine, German cuisine, Japanese cuisine and African influences. Without the familiar ingredients from their home countries, immigrants modified their traditional cuisines by using ingredients available in Peru. The three traditional staples of Peruvian cuisine are corn, potatoes, and chili peppers. Staples brought by the Spanish include rice, wheat and meats (beef, pork and chicken). Many traditional foods—such as quinoa, kaniwa, some varieties of chili peppers, and several roots and tubers have increased in popularity in recent decades, reflecting a revival of interest in native Peruvian foods and culinary techniques.

Jorge Corzo, owner and chef, migrated to the US 11 years ago with a dream of sharing the jewels of Peruvian Cuisine with Americans. The family has opened several restaurants since they have been in the US, such as El Tondero, Red, Peruvian Grill and El Warike. El Warike offers the best and most authentic Peruvian food and was the first Peruvian restaurant in Bradenton!
