Many traditional foods—such as quinoa, kaniwa, some varieties of chili peppers, and several roots and tubers have increased in popularity in recent decades, reflecting a revival of interest in native Peruvian foods and culinary techniques.

Jorge Corzo, owner and chef, migrated to the US 11 years ago with a dream of sharing the jewels of Peruvian Cuisine with Americans. The family has opened several restaurants since they have been in the US, such as El Tondero, Red, Peruvian Grill and El Warike.
